Tasty Tuesday: Mom's Falafels

One of our favorite meals is falafels. My mother-in-law gave me this falafel recipe and it is tried, tested and true.

1 can of garbanzo beans
1 onion
1/4 cup fresh cilantro
Tspn salt
3-4 cloves of garlic minced
2 Tspn ground cumin
1 Tspn ground coriander
1 Tspn baking powder
2 Tbls flour
1 egg
olive oil

Drain garbanzo beans and rinse. Blend all ingredients in food processor until able to form mixture into balls. If mixture is too dry add a couple tablespoons of water. Cover bottom of a glass pan with olive oil.
Bake for 40 minutes at 350 degrees. Flip after 20 minutes.

We like to serve the falafels on a pita with fresh tomato, homemade tzatziki and a little bit of hot sauce. Yummers!
